BBQ Pitmaster Competition Cooking Class

This class is a combination of classroom lectures and live demonstrations on how to select, prepare, cook and present Competition Quality Beef Brisket, Pork Butt, Chicken and Pork Ribs.
Presented by Alta and Jason Hertz, of RJs Smokehouse and BBQ, one of the most successful BBQ Competition Teams in the Northwest. They will demonstrate their techniques and tips that helped them earn Team of the Year in 2022 and Third Overall in 2023 and 2024.
A variety of smokers will be employed during the class along with several commercially available seasonings and sauces frequently used at Competition events.
Class size is limited to 26 participants overall. Each registered student is invited to sign up a Plus One who is a family member or a bona fide BBQ teammate at a reduced tuition until the class is full.
Students should wear clothing that is comfortable both indoors and out and be prepared for inclement weather, although our outdoor work will be under canopies. You might also consider bringing a folding chair to use during the outdoor sessions.
A class outline will be provided that allows for plenty of notetaking, but you might want to bring along a notebook for yourself or your Plus One. Bring your own writing instrument.
Bottled water will be available throughout the class. Food and other beverages are available for purchase through the host venue. The instructors will cook sufficient meat for everyone to get a sample taste but that is towards the end of the day and is not meant to substitute for a meal. You may also bring along your own lunch or snacks.

Entry Fee:
If you are thinking about including a Plus One, we recommend you should do it when you register as we expect the class to fill.
- $150.00 USD per Student
- $75.00 for guest of student that is either a teammate or immediate family member. Limit one guest per Student.
- Cancellations and refunds (minus $15 processing fees) available up to 21 days prior to the class.

- 1 year membership to PNWBA (or a one year extension if already a member)
